Deep-Dish Green Apple Pie Crumb Topping
Ingredients
- 10-12 green apples
- 2 tbsp flour
- 1 cup white sugar
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/2 lemon, grated rind and juice
- 3 tbsp butter
- 3 tbsp rum
Instructions
- Peel and core the apples and cut them into eighths.
- Mix the flour, sugars, spices, and lemon.
- Toss with the apples until well coated.
- Place in pie pan lined with pie dough.
- Dot with the butter
- Preheat the oven to 425°F. Bake for 5 minutes, then reduce the temperature to 350°F and bake for 40 minutes.
- Pie can be served warm with cream or cold with ice cream.

Crumb Topping
Ingredients
- 1/4 cup soften butter
- 1/3 cup flour
- 1/2 teaspoon cinnamon
- 1/3 cup sugar
Instructions
- Blend butter, sugar flour and cinnamon until mixture is crumbly. You can add a single drop of vanilla for added flavor or use vanilla sugar.
- Sprinkle over a top of pie or cake before placing in oven.
- To make vanilla sugar, store a few vanilla beans in a jar of vanilla for a month or two.

No Fail Pie Dough
Ingredients
- 2 cups white flour
- 13 tbsp shortening
- 1 teaspoon salt
- 8 tbsp milk
Instructions
- Cut the shortening into the salt and flour mixture. (It should look like crushed crackers.)
- Add milk and mix into a ball with a fork.
- Roll dough out between 2 sheets of parchment paper to desired thickness - 1/8" to 1/4"
- If you live in a humid climate, put the dough mixture in the refrigerator while you make the pie filling and then roll out the dough one inch larger than your pie pan.
- Fold the margin underneath the pastry and flute it with your fingers making it stand upright all the way around. Then pinch the dough between you forefinger and thumb all around.
