Pumpkin Cookies
Ingredients
- 1 cup butter or shortening
- 1 cup sugar
- 1 cup cooked pumpkin
- 1 egg
- 1 teaspoon vanilla
- 2 cups sifted all-purpose flour
- 1/2 teaspoon double acting baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1 cup chopped nuts
- 1 cup raisins
Instructions
- Cream together the butter (shortening) and sugar.,
- Add and mix well the pumpkin, egg, and vanilla.
- Sift together the flour, baking powder, baking soda, salt, cinnamon, and allspice. Add to the mixture.
- Stir in the chopped nuts and raisins.
- Drop cookies onto a cookie sheet lined with parchment paper and bake about 15 minutes.
